An exploration into the mysteries of food science for teachers and school nutrition directors interested in learning about the relationship between food, science and nutrition. Students will gain an understanding of the chemical and physical principles that determine the behavior of food. Emphasis will be placed on researching and testing experiments for use in the classroom and in training staff on scratch cooking and how the proper cooking process results in a higher quality recipe.
