NUED 914 - Contemporary Nutrition Issues for Educators
An update for teachers. health educators, and health professionals on current topics in nutrition. Research and curricula related to child and adolescent nutrition are explored in depth. Specific topics include: nutrition and learning, eating disorders, prevention of chronic disease, food allergies, sports nutrition, food safety, functional foods, and biotechnology. Development of an original instructional plan is required. NOTE: This course cannot be applied to the requirements for the Master's of Science degree, concentration in Food and Nutrition. Prerequisite: NUTR 910 Nutrition Science for Educators or approval of instructor.
