NUED 914 - Contemporary Nutrition Issues for Educators |
An update for teachers. health educators, and health professionals on current topics in nutrition. Research and curricula related to child and adolescent nutrition are explored in depth. Specific topics include: nutrition and learning, eating disorders, prevention of chronic disease, food allergies, sports nutrition, food safety, functional foods, and biotechnology. Development of an original instructional plan is required. NOTE: This course cannot be applied to the requirements for the Master's of Science degree, concentration in Food and Nutrition.
Prerequisite: NUTR 910 Nutrition Science for Educators or approval of instructor.
